Nestled at the foot of the majestic Mount Pelée, Depaz Cuvée de la Montagne is a testament to the unique expertise of the Depaz distillery. This exceptional white rum is crafted exclusively from the pure juice of sugar cane, meticulously harvested from the fertile volcanic soils that blanket the mountain's slopes.

The creation of this exquisite rum is a labor of love and patience. The cane juice undergoes a lengthy fermentation process, followed by a meticulous, slow reduction in fractions that spans at least 60 days. This unhurried approach allows the spirit to develop its signature complexity and depth of flavor. The rum then rests for a minimum of three months in inox tanks, allowing it to settle and harmonize before bottling.

Winery:
Rhum Depaz, a prestigious rum brand from Martinique, has a rich history dating back to 1651 when the La Montagne homestead was founded by Jacques Duparquet, the first governor of the island. The fertile yet dangerous soils of the Mount Pelée region have since been the birthplace of Depaz's exceptional rums. Throughout its history, several families, including the Depaz family, worked on the estate, expanding rum production and contributing to the development of the town of Saint Pierre. The town became the largest rum port in the world, with barrels of rum being dispatched to Europe, generating keen interest in the amber liquid. Saint Pierre experienced its heyday and was nicknamed "Little Paris of the Antilles." However, on May 8, 1902, the Mount Pelée volcano erupted, wiping the town of Saint Pierre off the map and claiming the lives of Victor Depaz's entire family. Orphaned and bankrupt, Victor initially decided to move to Canada, but during a stop-over in Martinique, he felt a strong connection to his birthplace, the Périnelle dwelling in Saint Pierre. He understood that his destiny lay there. Fifteen years after the eruption, on May 8, 1917, Victor Depaz started his new distillery, which was fed by the 521 hectares of sugar cane he owned on the flanks of Mount Pelée. He built a family home, a replica of the Périnelle dwelling, which became known as Depaz Castle. Victor lived there from 1922 onwards with his wife and eleven children, continuously improving the rums that bear his name. Depaz rums have garnered numerous prestigious awards over the years, starting with their first medal won in Marseille in 1922 and a gold medal at the 1927 La Rochelle exhibition. During the 1950s, Victor's sons, André and Raoul Depaz, took over the business, modernizing sugar cane production and improving the distillery, now known as the Depaz Distillery. Today, Depaz rums continue to be crafted with the utmost care, using the finest sugar cane grown in the unique volcanic soils of Mount Pelée, the purest spring water, and traditional production methods. The result is a range of exceptional rums that showcase the essence of Martinique's terroir and the passion of the Depaz family, who have been dedicated to creating the finest rums for over a century.
