Depaz Port Cask Finish

Depaz Port Cask Finish Aged Rhum: A Harmony of Oak and Port

In the realm of exceptional spirits, Depaz Port Cask Finish Aged Rhum stands as a testament to the art of patience and the magic of cask selection. This exquisite rhum begins its journey by maturing for a minimum of eight years in carefully chosen small oak casks. During this time, the rhum develops a complex character, absorbing the flavors and aromas imparted by the wood.

But the journey does not end there. The aged rhum is then transferred to Port casks for an additional eleven months. This finishing period is a delicate dance, as the rhum marries with the rich, fruity essence of the Port-soaked wood. The result is a rhum that boasts a captivating bouquet of fig and stewed fruits, a testament to the harmonious union of oak and Port.

On the nose, Depaz Port Cask Finish Aged Rhum presents a delicate balance of oaked notes, structured with the sweet, inviting aromas of vanilla, chocolate, and ripe fruits. It is a symphony of scent, each note playing its part in a captivating olfactory composition.

As the rhum graces the palate, it reveals a symphony of flavors. Soft oak takes the lead, followed by the comforting warmth of vanilla pastry and the indulgent richness of chocolate. As the rhum develops on the tongue, the mature Port notes come to the fore, intertwined with the earthy nuttiness of hazelnut, the concentrated sweetness of dried fruits, the depth of cocoa, and the floral delicacy of rose jam. The finish is a lingering encore, unveiling subtle hints of jasmine, coffee, and plum.

When it comes to pairing, Depaz Port Cask Finish Aged Rhum finds a sublime companion in a slice of grilled foie gras, served alongside a warm green papaya salad. The rich, buttery texture of the foie gras and the sweet, slightly spicy notes of the papaya create a delightful backdrop for the rhum's complex flavors to shine.

Alternatively, this exceptional rhum can elevate a roasted spiced duck breast, its Port-influenced notes enhancing the dish's savory and aromatic qualities. For a touch of sweetness, consider adding a splash of Depaz Port Cask Finish Aged Rhum to a plantain tarte tatin, where its figgy, stewed fruit notes will complement the caramelized richness of the dessert.

Embrace the artistry and dedication that defines Depaz Port Cask Finish Aged Rhum, and embark on a sensory journey that celebrates the marriage of fine rhum, patient aging, and the magic of Port cask finishing.
Winery:
Rhum Depaz, a prestigious rum brand from Martinique, has a rich history dating back to 1651 when the La Montagne homestead was founded by Jacques Duparquet, the first governor of the island. The fertile yet dangerous soils of the Mount Pelée region have since been the birthplace of Depaz's exceptional rums. Throughout its history, several families, including the Depaz family, worked on the estate, expanding rum production and contributing to the development of the town of Saint Pierre. The town became the largest rum port in the world, with barrels of rum being dispatched to Europe, generating keen interest in the amber liquid. Saint Pierre experienced its heyday and was nicknamed "Little Paris of the Antilles." However, on May 8, 1902, the Mount Pelée volcano erupted, wiping the town of Saint Pierre off the map and claiming the lives of Victor Depaz's entire family. Orphaned and bankrupt, Victor initially decided to move to Canada, but during a stop-over in Martinique, he felt a strong connection to his birthplace, the Périnelle dwelling in Saint Pierre. He understood that his destiny lay there. Fifteen years after the eruption, on May 8, 1917, Victor Depaz started his new distillery, which was fed by the 521 hectares of sugar cane he owned on the flanks of Mount Pelée. He built a family home, a replica of the Périnelle dwelling, which became known as Depaz Castle. Victor lived there from 1922 onwards with his wife and eleven children, continuously improving the rums that bear his name. Depaz rums have garnered numerous prestigious awards over the years, starting with their first medal won in Marseille in 1922 and a gold medal at the 1927 La Rochelle exhibition. During the 1950s, Victor's sons, André and Raoul Depaz, took over the business, modernizing sugar cane production and improving the distillery, now known as the Depaz Distillery. Today, Depaz rums continue to be crafted with the utmost care, using the finest sugar cane grown in the unique volcanic soils of Mount Pelée, the purest spring water, and traditional production methods. The result is a range of exceptional rums that showcase the essence of Martinique's terroir and the passion of the Depaz family, who have been dedicated to creating the finest rums for over a century.
