Description:
Ruby red colour, dense and compact. Intense and persistent, ethereal, fruity with hints of cherries and dried prunes, dried flowers and spices. Full bodied and very smooth, with beautifully balanced velvety tannins.
Winery:
In 1989, Cantina Valpolicella Negrar started this new label “Domìni Veneti” for the best cru from the vineyard and only for their best wines. Wines are named after the lands ruled by the Serenissima Republic of Venice in the 16th century when it was at the height of its power.
Wine Making:
Harvest by hand from September to October. Appassimento for about 120 days. 12 days of cold maceration then fermented at temperatures between 12° and 23°C with manual punching down of the cap three times a day, followed by post fermentation maceration on skins to give a total of 30 days. Complete malolactic fermentation then ageing in 50hl Slavonian oak casks for 24 months. Left to mature in bottle for a further 6-8 months before release.
