The typical Mosel-Kabinett should taste tender, fresh and fine. It is made from healthy, normally ripened grapes that are picked at the beginning of the harvest. The Kabinett is a quality wine for which, in contrast to the QbA, no chaptalization (enrichment) is permitted. Cabinet wines must have a minimum must weight of 73° Oe and, according to the VDP statutes, must no longer be dry.
