Technical information
Red vinification with maceration on the skins starting at a
temperature of 12 - 13 °C and rising gradually during fermentation
to 25 - 27 °C. The low temperatures at the beginning of the
fermentation process enable extraction of the Pinot Nero’s typical
colouring agents and stabilise them with the fruit’s own tannins.
After this process, the young wine is racked and placed in
30-hectolitre wooden casks where it ages for 4/6 months.

1919 - The origins The South Tyrolean winemaker Giuseppe Kettmeir, an expert in viticulture and an agronomist engineer, founded the winery that bears his name. Caldaro, immersed in the South Tyrolean vineyards, soon became the beating heart of its production of quality wines. 1964 - Spumantizzazione Kettmeir recognizes the potential of the bubbles and starts producing sparkling wines of great value with the Long Charmat Method for a Cuvée from Pinot Blanc grapes. A pioneer in South Tyrol, Kettmeir contributes to the revival of the local sparkling tradition. 1986 - The meeting with Santa Margherita Franco Kettmeir, nephew of Giuseppe, finds in Santa Margherita Gruppo Vinicolo the ideal heir for the family business. The Group, now leading the winery, introduces a new, more modern company philosophy, oriented towards technology and innovation. 1992 - The Classic Method The winery faces a new challenge and starts sparkling with the Classic Method: the most complex, the most elegant, the most distinctive - then as today - of Kettmeir's production. 2000 - The Classic Method Rosé A new experimentation is in the air: inspired by the excellent Pinot Nero and Chardonnay grapes, the company decides to introduce the refined, fresh and delicate Brut Rosé Metodo Classico into its range. 2011 - The "1919" Reserve A special and generous harvest, lays the foundation for the first Kettmeir Classic Reserve Method. At least sixty months of maturation on the lees, another three months of rest: a slow and patient process, to create the Extra Brut, the spearhead of the company's production. 2019 - The first 100 years The company, completely renovated, always committed to enhancing the territory in which it is immersed and in the care of the vineyards that give life to its fine wines, is ready to celebrate its first 100 years.
