Crafted using traditional methods, NINKI-ICHI Brewed in Wooden Tanks Ginjo is a dry ginjo sake that showcases a vibrant ginjo aroma and a flavor profile that never grows tiresome on the palate. What sets this sake apart is its unique fermentation process, which takes place in large wooden tubs, a practice that has been passed down through generations of skilled Toji (brewmasters) in Japan.

After pressing, the sake is pasteurized only once to prevent oxidation, ensuring that the delicate and complex flavors imparted by the wooden tubs remain intact. The resulting sake boasts a depth and nuance that is unattainable in sakes fermented in stainless steel tanks.

To fully appreciate the traditional yet innovative character of NINKI-ICHI Ginjo, it is recommended to serve the sake chilled in a wine glass. This allows the drinker to fully savor the fruition of the costly and labor-intensive brewing process that relies on the artisanal use of wooden tubs.

人氣酒造成位於2007年,距今只有十五年歷史,其前身是一間面臨經營困難的酒造,創辦人遊佐勇人用自有資金收購,並改名人氣酒造重新營運,現由3位資深的杜氏主理,與多位的傑出的日本酒業界專業人員合力打造銘柄「人氣一」。 名字「人氣一」的由來,是因為遊佐家裡有一個品牌名叫「人氣」,他們繼承了這個名字,但是算姓名後發現筆劃十二劃是凶,所以藏元替品牌名稱加上「一」字,就成了「人氣一」,有著人之氣傾注釀造工藝、專心一致於追求品質等深層意義。 人氣酒造的特色是「創新」和「木桶」。遊佐先生除了追求美味、純正的酒質之外,也希望旗下生產的並非傳統的酒,而是全新的酒,包括透過木桶釀造出擁有複雜味道的清酒。藏元又希望打破傳統清酒的刻版形象,聘請設計師重新構設計酒標,更商請日本知名的書法家紫舟大師揮毫設計人氣一的Logo,為銘柄建立鮮明形象。
