Description:
The grapes are de-stemmed and crushed then it is done a short maceration with skin contact in 2500 litre barrels. At the end of fermentation, the wine is racked into barrels of between 2000 and 500 litres capacity where it ages for around a year. During this period, the wine remains on the fine lees where is acquires complexity and a rich bouquet. It is held in bottle for some time before release. Brilliant and intense yellow white golden hints; characterful wine, reminiscent of exotic fruit and nuts on the nose; soft and persistent on the palate, with hints of spice, length and elegance Makes an excellent partner to complex dishes, even with strong flavours particularly risottos such as porcini, or celery, squash and almond, salt cod and other fish including salmon, scallops and crab. Winery:
For over a century, the Pieropan family has revolutionized winemaking in Soave, becoming one of the most acclaimed Italian wine families. The Pieropan legacy began in the late 1800s when visionary winemaker Leonildo Pieropan purchased the historic Palazzo Pallucci in the medieval village of Soave. Today, Leonildo’s great-grandsons, Andrea and Dario carry on the patriarch’s vision making it the oldest family owned estate in Soave. Pieropan oversees numerous acclaimed vineyards. It was the first winery to offer a single-vineyard Soave Classico with the release of Calvarino in 1971, Pieropan is credited with initiating a renaissance in quality winegrowing in Soave.
