Region – Mt. Etna, Sicily, Organic Winery, One of the most compelling and extraodinary winery I have ever had comes from Mount Etna. Pietradolce was founded in 2005 – by two brothers Michele & Mario Faro. Pietradolce found its home in Solicchiata, an area within the district of the Sicilian hill town of Castiglione di Sicilia on the northern slopes of Mt. Etna. The vineayrds extend over an area of 11 hectars at a height between 600-900 m a.s.l. and divided into 3 sections, two in Rampante and one in Zottorinoto. At the heart of the brother’s philosophy is a love for their land and the respect with which they treat it, “our volcano”, as they call Mt. Etna. Surrounded by native grapes of Nerello Mascalese, Nerello Cappuccio, Carricante, they have the most ancient and traditional of training systems, bush-trained vines. Their ultimate goal is “estrema qualità sull’Etna”: extreme quality on Etna soil by preserving and enhancing “Etna’s soul” in all its vividness and energy is priority number one.
Wine Making:
Located at 800m on the Northern slopes of Etna, the volcanic soil and distinct mineral components and microclimate – with intense day/night temperature swings – give this Etna Rosso extraordinary richness, minerality, fragrance and depth. Vinification: Grapes are harvested by hand, left to macerate on the skins for 18 days, soft pressed. Aging: 3 months in French,fine grain oak barrels,light toast. Natural malolactic fermentation
