This is the wine in which the delicate varietal aromas of the grape and the mineral notes from the soil are fully expressed. Delicate wild herbs on the nose, light and airy at first on the palate but then firm and long with an elegant tension between the dry savoury tones and the peach and cherry fruit. (Decanter)

Organic & certified biodynamic The brother and sister team Silvano and Alberta Follador inherited their vineyards in Valdobbiadene in 1999. They focused on allowing the terroir to be fully expressed in their wines, as they have taken the highly unusual step of bottling all of their Prosecco production with almost no residual sugar. By employing a less-is-more approach, they have distanced themselves from the Prosecco hype that swept the industry.
Wine Making:
After slow fermentation of the must, the wine ages on the fine lees in a tank for six months. In spring the wine undergoes secondary fermentation in a pressure tank (Martinotti method) after which, within the space of one or two months, the yeasts are removed by filtering. Although this passage may seem invasive and negative for the integrity and genuineness of the wine, it is instead decisive in enhancing its fresh clear fragrances and its dynamic yet delicate flavour.
