Description:
The fermentation and the maceration on the skins normally take about 25 days. No selected yeasts are used. The malolactic fermentation happens naturally in French barrels coopered expressively for us by Francois Frères in Burgundy. The wine stays in these barrels for approximately 24 months, half of this time on its lees. 15% of the barrels used for aging this wine are new; the remaining 85% have previously been used up to 4 times. There is no filtering and no fining prior to bottling. The main characteristic of this wine is the velvety and elegant tannins combined with a spicy and floral aroma. Our history begins at the end of the 60’s, when Rino Sottimano finished the Enological School and he made the decision to produce wine; the first step was purchasing the house and cellar in the Cotta’ cru and the surrounding vineyards. At the beginning there were just few hectares , that only after many efforts (and some luck too) became the actual 18 hectares in ones of the greatest vineyards in Barbaresco.Our estate has five vineyards of Barbaresco, Currà, Cottà, Fausoni, Pajorè and Basarin:we produce around 95.000 bottles : Dolcetto, Barbera d’Alba, Langhe Nebbiolo, Brachetto Matè and Barbaresco. Our vineyards are always the most important part of our estate, natural approach and passionate work are used to have structured, pure and long aging wines. We are firmly convinced that everything in the vineyards should be done in a serious and respectful way, with the only target of preserving the delicate balance between soils and the ecosystem.
