The wine was fermented and matured in 100% seasoned oak barriques using wild yeast with some early battonage. The wine shows the elegance and presence of a full bodied, barrel fermented Chardonnay while retaining the stone fruit and citrus freshness due to no secondary fermentation. Well balanced with some soft barrel fermentation characters and finishing with the clean zing of soft acid. This makes for an excellent wine to enjoy as an aperitif or with a range of seafood, white meats and cheese.
