St. Pauls Winery was founded in 1907 and one of the most beautiful wine growing areas in South Tyrol. Protected by the Alps and benefiting from 1800 hours of sunshine a year, with very warm days and cool nights during the ripening period, the vineyards produce fantastic, fully ripe grapes. Ecologically friendly measures are also adopted in the vineyard where herbicides are categorically avoided.
Wine Making:
Aging: fermented and matured in a large oak barrel for eight months, then bottled about one years later, 20.000 bottles. Vine training system: Pergola and Guyot (vines over 40 years)
