It all began in 1960 when Sergio Zenato, filed with energy and ambition experimented with new techniques of wine making and invested in native vines in order to obtain wine of the highest quality out of his vineyards in Lugana and Valpolicella. Today, the family’s winemaking tradition continues to pursue Sergio’s great enterprise with the same enthusiasm. Zenato’s Corvina, Rondinella and Oseleta vineyards are located in the heart of Valpolicella Classica, in Sant’Ambrogio. This is where Amarone Zenato is made, which today is considered one of the most valuable Valpolicella wines on the international stage and one of the most important Italian red wines. Sergio Zenato was the first to re-discover an ancient method of Valpolicella by then long neglected: the “Ripassa”, made by “repassing” Valpolicella wine over the pressed grapes of Amarone.
Wine Making:
The grapes, after harvesting and careful selection, are left to rest in the drying loft for a period of between 3 and 4 months in crates, taking care over the spacing between the bunches to promote the correct drying. The dried grapes are then pressed and macerated in the skins for 15-20 days at a temperature of 23-25°C. The new wine is aged in oak casks for a minimum period of 36 months.
